Instructions
Roast eggplant over a medium flame until the eggplant is soft
Remove the charred skin and mash it well, keep it aside
Heat oil and ghee in a pan
Temper cumin seeds
Add garlic and sauté until raw smell vanishes
Add onion, ginger, curry leaves, green chili and sauté until raw smell vanishes
Add tomato and sauté until they are mushy
Add salt, turmeric powder, red chili powder, asafoetida, garam masala powder and mix well
Add 2~3tbsp of water and cook well in medium flame
Once the above is well cooked, add mashed roasted egg plant and cook for another 5min
Garnish with chopped coriander leaves
Notes
Serve hot with rotis or parathas
