Ingredients
  

  • 500 gm Baby Potato - washed, boiled intact and peeled, potatoes should remain whole and intact
  • 2 tbsp Olive oil / ஆலிவ் எண்ணெய்
  • 2 tbsp Thyme leaves, Fresh
  • 1 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tsp Garam Masala powder
  • 2 tbsp Sea Salt - crushed

Instructions
 

  • Place the potatoes in a large bowl
  • Add the oil, red chili powder, garam masala, thyme
  • Toss gently to coat the potatoes and set aside for 1 hour
  • Pre-heat the oven to moderate 180°C.
  • Place the potatoes in a lightly oiled baking dish. Bake for 20min, turning frequently and brushing with the remaining oil and thyme mixture, until golden brown
  • Place in a serving bowl and sprinkle with salt
  • Garnish with extra thyme sprigs, if desired
  • Serve hot
