Place the potatoes in a large bowl
Add the oil, red chili powder, garam masala, thyme
Toss gently to coat the potatoes and set aside for 1 hour
Pre-heat the oven to moderate 180°C.
Place the potatoes in a lightly oiled baking dish. Bake for 20min, turning frequently and brushing with the remaining oil and thyme mixture, until golden brown
Place in a serving bowl and sprinkle with salt
Garnish with extra thyme sprigs, if desired
Serve hot
