Baked rice with Butternut Squash
Ingredients
- 2 cup Basmati Rice / பாசுமதி அரிசி - ¾cooked in vegetable broth
- 250 gm Butternut Squash - peeled n chopped
- 500 ml Vegetable Broth
- 2 nos Shallots - sliced
- 4 pod Garlic / பூண்டு - crushed
- 100 gm Spinach leaves / பசலைக்கீரை - blanched
- 2 nos Red Chili, Dry / வற மிளகாய் - sliced
- 100 gm Cheese - grated
- 2 tbsp Olive oil / ஆலிவ் எண்ணெய்
- 1 tsp Black Pepper / மிளகு - powder
- 2 tsp Salt / உப்பு - adjust to your taste
Instructions
- Heat oil in a pan
- Add shallots and sauté them for about 5min
- Add garlic, red chili, butter squash and fry them for 5min
- Add cooked rice and stir well to coat
- Fill them in a baking dish
- Scatter cheese, spinach over the rice
- Pre-heat oven to 200°C
- Bake for 20min or until the cheese are golden brown
- Stir well and serve hot
