Baked rice with Butternut Squash

Ingredients
  

  • 2 cup Basmati Rice / பாசுமதி அரிசி - ¾cooked in vegetable broth
  • 250 gm Butternut Squash - peeled n chopped
  • 500 ml Vegetable Broth
  • 2 nos Shallots - sliced
  • 4 pod Garlic / பூண்டு - crushed
  • 100 gm Spinach leaves / பசலைக்கீரை - blanched
  • 2 nos Red Chili, Dry / வற மிளகாய் - sliced
  • 100 gm Cheese - grated
  • 2 tbsp Olive oil / ஆலிவ் எண்ணெய்
  • 1 tsp Black Pepper / மிளகு - powder
  • 2 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Heat oil in a pan
  • Add shallots and sauté them for about 5min
  • Add garlic, red chili, butter squash and fry them for 5min
  • Add cooked rice and stir well to coat
  • Fill them in a baking dish
  • Scatter cheese, spinach over the rice
  • Pre-heat oven to 200°C
  • Bake for 20min or until the cheese are golden brown
  • Stir well and serve hot
