Bisi bele bhath (Kannada: ಬಿಸಿ ಬೇಳೆ ಭಾತ್ bisi bēle bhāt) is a rice-based dish with its origins in the state of Karnataka, India. Bisi-bele-bhaath translates to hot lentil rice in the Kannada language. It is also known as Bisi bele huliyanna (Kannada: ಬಿಸಿ ಬೇಳೆ ಹುಳಿ ಅನ್ನ), which means "hot lentil sour rice". The traditional preparation of this dish is quite elaborate and involves the use of spicy masala, toor dal (a type of lentil) and vegetables. Spices like nutmeg and asafoetida, curry leaves and tamarind pulp used in its preparation contribute to the unique flavour and taste of this dish. It is served hot and sometimes eaten along with salad, papad or potato chips. This dish is commonly found in restaurants that serve the Udupi cuisine. Ingredients
  

  • 1 cup Rice, raw / பச்சரிசி
  • ½ cup Thoor dhal / துவரம் பருப்பு
  • cup Mixed Vegetables - CarrotFrench Beans, Cauliflower, Fresh Green Peas, Drumstick, Potato
  • 1 nos Tomato / தக்காளி - finely chopped
  • 1 nos Onion / வெங்காயம் - finely chopped
  • 10 - 15 nos Shallots
  • ½ cup Coconut, Fresh / தேங்காய் - grated (optional)
  • 1 lemon size Tamarind extract / புளிக் கரைசல்
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • 1 pinch Asafoetida / பெருங்காயம்
  • 2 tsp Jaggery / வெல்லம் - grated (optional)
  • 2 - 3 tbsp Oil / எண்ணெய்
  • 4 - 5 nos Black Pepper / மிளகு
  • 5 nos Cloves / லவங்கம்
  • 1 inch piece Cinnamon stick / லவங்கப் பட்டை
  • 1 nos Marathi Moggu
  • 4 nos Cardamom, Green / ஏலக்காய்
  • 1 tsp Cumin seed / சீரகம்
  • 1 tsp Coriander seed / தனியா
  • 1 tsp Fenugreek seed / வெந்தயம்
  • 10 - 12 nos Red Chili, Dry / வற மிளகாய்
  • 10 nos Cashew nut / முந்திரிப் பருப்பு
  • 2 tsp Salt / உப்பு - adjust to your taste
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 2 - 3 tbsp Ghee / நெய்

Instructions
 

  • Soak tamarind in warm water and extract pulp
  • Dry roast chana dhal, urad dhal, cardamoms, marati moggu, cloves, fenugreek seeds, cumin seeds, cinnamon and dried red chillies (reserve 1nos), coriander seeds, black pepper in a pan till fragrant
  • Cool and grind to a powder
  • Heat oil in a pressure cooker
  • Add onion and sauté till raw smell goes off
  • Add onion shallot and sauté till raw smell goes off
  • Add tomato and sauté till mushy
  • Add all other vegetables and sauté
  • Add turmeric powder, asafoetida, masala powder, salt. coconut and mix well
  • Add tamarind pulp and jaggery
  • Add rice and thoor dhal
  • Add 3cups of water and mix well
  • Pressure cook it well
  • Heat ghee in a pan
  • Temper mustard seeds
  • Add red chilli, curry leaves and fry
  • Add cashew nuts and golden fry it
  • Add to the cooked bisi bela huli anna and mix well
  • Garnish with fresh coriander leaves
  • Serve hot with raita, chips, fried appalam
