Ingredients
  

  • 500 gm Bitter Gourd / பாகற் காய் - finely chopped
  • 100 gm Jaggery / வெல்லம் - dissolved in water
  • 2 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 1 pinch Asafoetida / பெருங்காயம்
  • 2 tbsp Oil / எண்ணெய்
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 2 tsp Ginger powder, Dry / சுக்குப் பொடி - powdered, optional

Instructions
 

  • Heat oil in a pan
  • Temper mustard in it
  • Add chana dhal, urad dhal and fry until golden brown
  • Simmer the flame
  • Add asafoetida, turmeric powder, red chili powder and fry a little
  • Add bitter gourd and 300~400ml of water and cook closed in high flame
  • Once bitter gourd is tender enough, add jaggery solution, dry ginger powder and mix well
  • Cook till the jaggery solution dried up, stir occasionally
  • Serve hot with rice
