Heat oil in a pan
Temper mustard in it
Add chana dhal, urad dhal and fry until golden brown
Simmer the flame
Add asafoetida, turmeric powder, red chili powder and fry a little
Add bitter gourd and 300~400ml of water and cook closed in high flame
Once bitter gourd is tender enough, add jaggery solution, dry ginger powder and mix well
Cook till the jaggery solution dried up, stir occasionally
Serve hot with rice
