Ingredients
  

  • 20 nos Baby corn
  • 250 gm Carrot / காரெட் - cut length wise
  • ½ cup Shallots - peeled
  • 3 nos Tomato / தக்காளி
  • 500 ml Oil / எண்ணெய் - for frying
  • ½ tsp Cumin seed / சீரகம்

for grinding together

  • 2 nos Onion / வெங்காயம்
  • 7 pods Garlic / பூண்டு
  • 1 tbsp Mint leaves, Fresh / புதீனா இலை - chopped
  • 1 tbsp Coriander leaves, Fresh / கொத்தமல்லி - chopped
  • 3 nos Green Chili, Fresh / பச்சை மிளகாய்
  • 1 tsp Red Chili powder / மிளகாய்த் தூள்
  • 1 tbsp Coriander powder / மல்லித் தூள்
  • 10 nos Cashew nut / முந்திரிப் பருப்பு
  • ½ tsp Garam masala powder
  • 1 tsp Rock salt / கல்லுப்பு - adjust to your taste
  • ½ tsp Sugar, White / சர்க்கரை, வெள்ளை
  • ½ tsp Garam masala powder

Instructions
 

  • Blanch tomatoes in hot water for few minutes
  • Peel outer skin and grind to a smooth paste, strain to remove seeds and outer skin
  • Pressure cook peeled baby corn, carrots in enough water till one whistle
  • Heat oil in a broad frying pan
  • Add cumin seeds when it splutters, fry small onions, till golden
  • Mix ground paste, stir constantly in reduced flame until pleasant aroma comes from the masala
  • Add tomato paste, stir for few minutes
  • Pour cooked corn, carrot mixture along with cooked water to the masala
  • Cook till gravy becomes thick
