Choco Coffee Cake with Caramel Walnut Glaze
Ingredients
- 1 cup All Purpose flour
- 10 tbsp Chocolate powder
- 4 nos Egg / முட்டை
- 2 tbsp Sugar, White / சர்க்கரை, வெள்ளை
- 2 tsp Vegetable Oil
- 1 cup Walnut - crushed
- 1 tsp Baking powder
- 1 pinch Salt / உப்பு
- 1 cup Freshly Brewed Coffee
- 1 cup Milk / பால்
for Glaze
- 2 tbsp Sugar, White / சர்க்கரை, வெள்ளை
- 1 tbsp Water / தண்ணீர்
- 1 tbsp Butter / வெண்ணெய்
- ¼ cup Walnut - crushed
Instructions
- Sift the all purpose flour along with baking powder and chocolate powder
- Separate egg yolk and egg white
- Add the egg yolk, walnut to sifted ingredients, mix well
- Add the brewed coffee, milk little by little until the mixture becomes paste
- Beat the egg white until it becomes frothy
- Add sugar to the egg white and beat further until soft peak
- Fold the egg white into the cake mixture - this will make the mixture light and fluffy
- Pre-heat the oven to 180°C
- Pour the mixture into a greased cake pan
- Bake for 25~30min
- Allow the cake to cool
Glazing
- Heat a sauce pan
- Add sugar and 1tbsp of water
- Stir continuously until sugar crystallizes
- Reduce heat a little and continue stirring
- Sugar will start melting and start changing color to brown
- Add butter and allow it to melt
- Add walnut and mix well
- Top the cake
