Choco Coffee Cake with Caramel Walnut Glaze

Ingredients
  

  • 1 cup All Purpose flour
  • 10 tbsp Chocolate powder
  • 4 nos Egg / முட்டை
  • 2 tbsp Sugar, White / சர்க்கரை, வெள்ளை
  • 2 tsp Vegetable Oil
  • 1 cup Walnut - crushed
  • 1 tsp Baking powder
  • 1 pinch Salt / உப்பு
  • 1 cup Freshly Brewed Coffee
  • 1 cup Milk / பால்

for Glaze

  • 2 tbsp Sugar, White / சர்க்கரை, வெள்ளை
  • 1 tbsp Water / தண்ணீர்
  • 1 tbsp Butter / வெண்ணெய்
  • ¼ cup Walnut - crushed

Instructions
 

  • Sift the all purpose flour along with baking powder and chocolate powder
  • Separate egg yolk and egg white
  • Add the egg yolk, walnut to sifted ingredients, mix well
  • Add the brewed coffee, milk little by little until the mixture becomes paste
  • Beat the egg white until it becomes frothy
  • Add sugar to the egg white and beat further until soft peak
  • Fold the egg white into the cake mixture - this will make the mixture light and fluffy
  • Pre-heat the oven to 180°C
  • Pour the mixture into a greased cake pan
  • Bake for 25~30min
  • Allow the cake to cool

Glazing

  • Heat a sauce pan
  • Add sugar and 1tbsp of water
  • Stir continuously until sugar crystallizes
  • Reduce heat a little and continue stirring
  • Sugar will start melting and start changing color to brown
  • Add butter and allow it to melt
  • Add walnut and mix well
  • Top the cake
