Coconut Creamy Cauliflower Soup
Ingredients
- 1 nos Cauliflower - cut into florets
- 500 ml Vegetable broth
- 1 cup Coconut Milk / தேங்காய்ப் பால் - thick
- 1 nos Onion / வெங்காயம் - thinly sliced
- 4 nos Garlic / பூண்டு - minced
- ½ tsp Coriander powder / மல்லித் தூள்
- ½ tsp Cumin powder / சீரகத் தூள்
- ½ tsp Black Pepper powder / மிளகுத்தூள் - freshly ground
- ¼ cup Coriander leaves, Fresh / கொத்தமல்லி - chopped
- 1 cup Bread croutons - optional
- 1 tsp Salt / உப்பு - adjust to your taste
- 2 tbsp Olive oil / ஆலிவ் எண்ணெய்
Instructions
- Heat oil in a saucepan
- Add onion, sauté well until they are translucent
- Add garlic, sauté for 2~3min
- Add cauliflower, sauté for a while
- Add broth, salt, coriander powder, cumin powder
- Bring to a boil over medium heat.
- Simmer for about 15min, such that cauliflower is super soft
- Filter out cauliflower
- Blend, sieve cauliflower until smooth
- Add to the broth
- Add coconut milk, pepper powder
- Garnish with coriander leaves
Notes
Serve hot along with bread croutons
