Ingredients
  

  • 1 cup Rice / அரிசி - cooked
  • ½ cup Milk / பால்
  • cup Curd / தயிர்
  • ½ nos Cucumber / வெள்ளரிக் காய் - chopped
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 tsp Fenugreek powder / வெந்தையப் பொடி - optional
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - finely chopped

for Tempering

  • 2 tsp Oil / எண்ணெய்
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 1 pinch Asafoetida / பெருங்காயம்
  • 1 nos Red Chili, Dry / வற மிளகாய் - optional
  • 1 nos Green Chili, Fresh / பச்சை மிளகாய் - finely chopped
  • 5 nos Curry leaves, Fresh / கருவேப்பிலை
  • 10 nos Shallots
  • 1 inch Ginger / இஞ்சி - minced

Instructions
 

  • Add salt to cooked rice and mix well into a kind of a coarse paste when its warm, allow it to cool
  • Add cucumber and mix well
  • Add milk, curd and mix well
  • Add asafoetida and mix well
  • Heat oil in a pan
  • Temper mustard and when it starts spluttering add curry leaves, channa dhal, urad dhal, green chilli and red chilli
  • Add onion and sauté well until golden brown
  • Add fenugreek powder and mix well
  • Add the above to the rice mix, allow it to cool
  • Garnish with coriander leaves
  • Serve with any pickle
