Ingredients
  

  • 6, nos Egg / முட்டை - well beaten
  • 3 tbsp Spinach leaves / பசலைக்கீரை - chopped
  • 1 tbsp Capsicum, Red - diced
  • 1 tbsp Capsicum, Yellow - diced
  • 1 nos Tomato / தக்காளி - diced
  • 1 nos Onion / வெங்காயம் - diced
  • 2 tbsp Spring Onion - chopped
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய் - minced
  • 1 tsp Mint leaves, Fresh / புதீனா இலை - chopped
  • 4 nos Asparagus - optional
  • 25 ml Olive oil / ஆலிவ் எண்ணெய்
  • 1 tsp Black Pepper / மிளகு - powdered
  • 1 tsp Cumin seed / சீரகம் - powdered
  • 1 tsp Salt / உப்பு - adjust according to your taste

Instructions
 

  • Mix all cut vegetables, beaten egg, salt, cumin powder, pepper powder
  • Pre-heat oven at 200°C
  • Grease muffin plates with olive oil
  • Mix rest of olive oil along with the above mix
  • Fill in the mix in each muffin cups
  • Bake for about 20~25min
  • Rest it for a while

Notes

Serve with ketchup or chili scauce
