Ingredients
  

  • 500 gm Eggplant, Green / கத்தரிக்காய் பச்சை - cut into 1~1½inch long pieces
  • 1 nos Onion / வெங்காயம் - sliced
  • 3 nos Garlic / பூண்டு - sliced
  • 1 tsp Mustard seed / கடுகு
  • 10 nos Curry leaves, Fresh / கருவேப்பிலை
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய் - chopped
  • 1 inch piece Cinnamon stick / லவங்கப் பட்டை
  • 1 tsp Fenugreek seed / வெந்தயம்
  • 2 tsp Madras Curry powder
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Red Chili powder / மிளகாய்த் தூள்
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 cup Coconut Milk / தேங்காய்ப் பால்
  • 2 tbsp Coconut Oil / தேங்காய் எண்ணெய்

Instructions
 

  • Heat oil in a pan
  • Add mustard and allow it to splutter
  • Add onion, garlic, green chilli, curry leaves and fry until fragrant
  • Add cinnamon stick
  • Add eggplant and fry for 2min
  • Add curry powder, turmeric powder, red chilli powder fenugreek seeds and mix well
  • Add coconut milk into the pan and give it a stir
  • Add salt and cook for 10min until eggplant turn tender
  • Serve hot with rice
