Instructions
Heat oil in a pan
Add mustard and allow it to splutter
Add onion, garlic, green chilli, curry leaves and fry until fragrant
Add cinnamon stick
Add eggplant and fry for 2min
Add curry powder, turmeric powder, red chilli powder fenugreek seeds and mix well
Add coconut milk into the pan and give it a stir
Add salt and cook for 10min until eggplant turn tender
Serve hot with rice
