Gonkuura Pachchadi
Ingredients
- 150 gm Gonkuura leaves / புளிச்சக் கீரை இலை - cleaned, washed, pat dried
- 30 gm Red Chili, Dry / வற மிளகாய் - adjust to your spice level
- 1 tbsp Coriander seed / தனியா
- 1 tbsp Cumin seed / சீரகம்
- 1 tsp Fenugreek seed / வெந்தயம்
- 100 ml Sesame Oil / நல்லெண்ணெய்
- 4 pod Garlic / பூண்டு - for grinding
- 6 pod Garlic / பூண்டு - smashed for garnishing (optional)
- 10 nos Curry leaves, Fresh / கருவேப்பிலை
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Heat a pan
- Dry roast red chili, when chilies are little fried, add 10ml of oil
- Fry a little
- Add coriander seeds, cumin seeds, fenugreek, fry them well, keep aside, allow it to cool
- In the same pan add garlic for grinding and fry a little
- Add gonkuura leaves such that it covers garlic pods, close and cook for 2min in low flame
- Stir a bit such that leaves are evenly cooked
- Once leaves wilt and turn colour, switch off the flame, allow it to cool
- Grind above into neither fine nor coarse paste
- Heat rest of oil in the pan
- Add crushed garlic, fry until crispy
- Add green curry leaves, fry a little
- Garnish into the pachchadi
- Add salt, mix well
