Gooseberry Thokku
Ingredients
- 500 gm Gooseberry / நெல்லிக் காய்
- 2~3 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 tsp Fenugreek powder / வெந்தையப் பொடி
- 2 tsp Mustard seed / கடுகு
- 1 pinch Asafoetida / பெருங்காயம்
- 150~200 ml Sesame Oil / நல்லெண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Pressure cook gooseberry and de-seed it
- Grind/Smash the de-seeded gooseberry into a fine paste
- Heat oil in a pan
- Temper mustards, add turmeric powder, asafoetida
- Add the ground paste and mix well
- Add salt, red chili powder, fenugreek powder and mix well
- Add remaining oil little by little and stir the paste continuously
- Once the paste is cooked well, it will stop absorbing oil, stop adding further oil
- Allow it to cool
Notes
- Store in an airtight dry container
- Store in a cool dry place
- Never use damp spoon or spatula
