Gujarati Handvo
Ingredients
- ½ cup Rice / அரிசி
- ½ cup Urad Dhal / உளுத்தம் பருப்பு
- ½ cup Moong Dhal / பயத்தம் பருப்பு
- ½ cup Chana Dhal / கடலைப் பருப்பு
- 200 gm Bottle gourd / சுரைக் காய் - grated
- 200 ml Curd / தயிர்
- 1 pinch Asafoetida / பெருங்காயம்
- 2 nos Green Chili, Fresh / பச்சை மிளகாய்
- 30 gm Ginger / இஞ்சி
- 3 pod Garlic / பூண்டு
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 tsp Baking soda
- 2 tbsp Oil / எண்ணெய்
- 1 tsp Mustard seed / கடுகு
- 1 tbsp Sesame seed, White / எள்ளு, வெள்ளை
- 4 nos Red Chili, Dry / வற மிளகாய்
Instructions
- Soak rice, urad dhal, chana dhal, moong dhal in sufficient water for about 5~6hrs
- Grind them into a thick batter along with curd, asafoetida, salt
- Allow the batter to ferment overnight or at least for 5~6hrs
- Grind ginger, garlic, green chili into a coarse paste
- Add above paste, grated bottle gourd, baking soda into the batter and mix well
- Heat oil in a pan
- Temper mustard, red chili and sesame seeds
- Pour the batter mix into pan
- Close it with a lid and cook for about 5~6min in low flame
- Flip it carefully and cook other side again for about 12~15min in low flame
- Garnish with coriander leaves and fried curry leaves
- Serve hot with green chutney
