Karela Gravy Masala
Ingredients
- 500 gm Bitter Gourd / பாகற் காய் - chopped into ¼inch pieces
- 2 nos Onion / வெங்காயம் - finely chopped
- 8 - 10 pod Garlic / பூண்டு - long sliced
- 2 nos Tomato / தக்காளி - finely chopped
- 2 tsp Cumin seed / சீரகம்
- 1 tsp Kalonji
- ¾ cup Jaggery / வெல்லம்
- 1 tsp Red Chili powder / மிளகாய்த் தூள்
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 tsp Cumin powder / சீரகத் தூள்
- 1 tsp Coriander powder / மல்லித் தூள்
- 1 ts[ Garam Masala powder
- 1 tsp Salt / உப்பு - adjust to your taste
- 2 tbsp Oil / எண்ணெய்
- 1½ cup Water / தண்ணீர்
- 5 nos Curry leaves, Fresh / கருவேப்பிலை
- 1 pinch Asafoetida / பெருங்காயம்
Instructions
- Heat oil in a pan
- Add jeera and kalonji and allow it to splutter
- Add garlic, onion and sauté well until raw smell goes off
- Add tomato and cook for 1~2min
- Add jeera powder, dhaniya powder, turmeric powder, red chili powder and mix well, allow it to cook for 2min
- Simmer the flame to medium
- Add karela, salt, water and mix well, allow to cook until karela turns softer
- Stir occasionally in between
- Add garam masala power, jaggery, asafoetida and cook for about 5min until the jaggery melts
- Serve hot with rice or roti
