Ingredients
  

  • 500 gm Bitter Gourd / பாகற் காய் - chopped or sliced
  • 1 nos Onion / வெங்காயம் - chopped or sliced
  • 50 gm Peanut / வேர்க் கடலை
  • 5 nos Red Chili, Dry / வற மிளகாய் - adjust to your spice level
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Fenugreek seed / வெந்தயம்
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 2 tbsp Fenugreek leaves, Dry / வெந்தய இலை, உலர்ந்தது - optional
  • 1 tsp Garam Masala powder
  • 200 ml Oil / எண்ணெய்
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Grind peanuts, red chili, garam masala into a fine powder
  • Fry bitter gourd in oil until golden, keep aside
  • Heat 1tbsp of oil in a pan
  • Add mustard, allow it to splutter
  • Add channa dhal, urad dhal, fenugreek and fry until crispy
  • Add onion and sauté until transparent
  • Add ground masala, salt, mix well
  • Add fried karela, mix well
  • Cook closed for 5min
  • Sprinkle kasoor methi over

Notes

Serve hot along with rice
