Ingredients
  

  • cup Besan flour / கடலை மாவு
  • ½ cup Curd / தயிர்
  • ½ tsp Baking soda
  • ½ cup Water / தண்ணீர்
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய் - paste
  • 1 tsp Sugar, White / சர்க்கரை, வெள்ளை
  • 2 tsp Lemon juice / எலுமிச்சை சாறு
  • 10 gm Eno Fruit Salt
  • 1 tsp Salt / உப்பு - adjust to your taste

to Pour on Dhoklas

  • 2 tbsp Water + Oil - to be topped on dhoklas

for Thadka

  • 1 tbsp Oil / எண்ணெய்
  • 1 tbsp Mustard seed / கடுகு
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய் - finely chopped
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை

for Garnishing

  • 2 tbsp Coconut, Fresh / தேங்காய் - grated
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி

Instructions
 

  •  Mix curd and water well
  • Add besan and make a batter without forming lumps
  • Add baking soda and mix well
  • Allow it to rise for 1hr
  • Add citric acid, oil, salt, sugar, green chili paste and turmeric powder to the batter
  • Fill the pressure cooker with water and allow it to boil
  • When water starts boiling mix eno gently to the batter keeping a little to sprinkle over the plate
  • Gently dust little eno over the plate
  • Pour the batter on to the plate
  • Cover the pressure cooker with its lid and cook for 5min in high flame
  • When steam starts coming out simmer the flame and cook for another 5~7min
  • Open the lid carefully and poke the dhokla with a toothpick, the batter should not be sticky on the toothpick
  • Remove the plate from the cooker and pour the oil-water mix over the cooked dhokla
  • Heat oil in a pan
  • Temper mustard seeds, curry leaves, green chili
  • Pour over dhokla
  • Allow it to cool
  • Cut into cubes

Notes

Serve with Tamarind Chutney and/or Green Chutney and/or Jilebis
