Instructions
Mix curd and water well
Add besan and make a batter without forming lumps
Add baking soda and mix well
Allow it to rise for 1hr
Add citric acid, oil, salt, sugar, green chili paste and turmeric powder to the batter
Fill the pressure cooker with water and allow it to boil
When water starts boiling mix eno gently to the batter keeping a little to sprinkle over the plate
Gently dust little eno over the plate
Pour the batter on to the plate
Cover the pressure cooker with its lid and cook for 5min in high flame
When steam starts coming out simmer the flame and cook for another 5~7min
Open the lid carefully and poke the dhokla with a toothpick, the batter should not be sticky on the toothpick
Remove the plate from the cooker and pour the oil-water mix over the cooked dhokla
Heat oil in a pan
Temper mustard seeds, curry leaves, green chili
Pour over dhokla
Allow it to cool
Cut into cubes
Notes
Serve with Tamarind Chutney and/or Green Chutney and/or Jilebis
