Malabar Cucumber Kootu
Ingredients
- Malabar Cucumber / மலபார் வெள்ளரி - peel off skin and cut into pieces
- ½ cup Moong Dhal / பயத்தம் பருப்பு
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 cup Coconut, Fresh / தேங்காய் - grated
- 4-6 nos Red Chili, Dry / வற மிளகாய் - adjust to your spice level
- 1 tsp Mustard seed / கடுகு
- 1 tsp Chana Dhal / கடலைப் பருப்பு
- 4 tsp Urad Dhal / உளுத்தம் பருப்பு
- 1 tbsp Oil / எண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 pinch Asafoetida / பெருங்காயம்
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
Instructions
- Pressure cook cucumber, moong dhal along with turmeric powder with 1cup of water for a whistle or two
- Dry roast urad dhal, red chili separately, allow it to cool
- Grind along with coconut into a fine paste, add as little water as possible
- Heat oil in a pan
- Add mustard, allow it to splutter
- Add urad dhal, channa dhal, curry leaves, fry until golden brown
- Add asafoetida, salt, cooked cucumber, moon dhal, ground coconut paste mix well
- Add little water if required, bring to a boil

Serve hot along with rice
