Mattar Kachori
Ingredients
for Pastry
- 1 cup Wheat flour (atta)
- 1 tbsp Ghee / நெய்
- ¼ tsp Baking powder
- ¼ tsp Salt / உப்பு
- ¼ tsp Warm water / வெந்நீர்
for Stuffing
- 1 cup Green Peas, Fresh / பச்சைப் பட்டாணி
- ¼ tsp Red Chili powder / மிளகாய்த் தூள்
- ¼ tsp Turmeric powder / மஞ்சள் தூள்
- ½ tsp Coriander powder / மல்லித் தூள்
- ½ tsp Fennel powder / சோம்புத் தூள்
- ½ tsp Chaat Masala
- ½ tsp Mango powder, Dry
- ½ tsp Ginger / இஞ்சி - paste
- ½ tsp Green Chili, Fresh / பச்சை மிளகாய் - paste
- ¼ tsp Cumin seed / சீரகம்
- 1 tbsp Besan flour / கடலை மாவு
- 2 tsp Ghee / நெய்
- 1 tsp Salt / உப்பு - adjust to your taste
for Frying
- 500 ml Oil / எண்ணெய்
Instructions
for Pastry
- Mix wheat flour, salt, baking powder, ghee
- Add warm water little by little and make a thick dough
- Cover it with a damp cloth and set aside for 30min
for Stuffing
- Boil peas well and drain water
- Mash it coarsely while it is still hot
- Heat oil in a pan
- Add cumin seeds and allow it to splutter
- Add ginger and chili paste and fry it for a min
- Add red chili powder, chaat masala, dry mango powder, turmeric powder, coriander powder and mix well
- Add besan and sauté well
for Kachoris
- Knead the dough again so that it softens up
- Divide it into equal parts
- Roll them into circles of 3~4inch diameter over a dusted board
- Fill in the stuffing in the center
- Grease edge with water and join it so as to make a ball again
- Roll them into 3~4inch kachoris
- Cover them in a damp cloth until all dough is rolled into kachoris
- Heat oil in a frying pan
- Fry kachoris until golden brown and crispy
- Serve hot with green chutney
