Ingredients
  

  • 2 cup Basmati Rice / பாசுமதி அரிசி - cooked
  • 1 bunch Fenugreek leaves, Fresh / வெந்தயக் கீரை - chopped finely
  • 1 tbsp Ginger / இஞ்சி - paste
  • 1 tbsp Garlic / பூண்டு - paste
  • ½ cup Tamarind extract / புளிக் கரைசல்
  • 5 nos Red Chili, Dry / வற மிளகாய்
  • tbsp Coriander seed / தனியா
  • 3 nos Cinnamon stick / லவங்கப் பட்டை
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 2 nos Cardamom, Green / ஏலக்காய்
  • 2 tbsp Ghee / நெய்
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Dry fry red chili, coriander seed, clove, channa dhal, urad dhal, green cardamom, cinnamon and grind into fine powder
  • Heat ghee in a pan
  • Add ginger, garlic paste and fry a little
  • Add methi leaves and fry until the colour changes
  • Add tamarind extract and mix well
  • Add masala powder ground above, salt and mix and cook until all the water evaporates
  • Mix with cooked rice
  • Serve hot along with raita
