Dry fry red chili, coriander seed, clove, channa dhal, urad dhal, green cardamom, cinnamon and grind into fine powder
Heat ghee in a pan
Add ginger, garlic paste and fry a little
Add methi leaves and fry until the colour changes
Add tamarind extract and mix well
Add masala powder ground above, salt and mix and cook until all the water evaporates
Mix with cooked rice
Serve hot along with raita
