Mexican Fried Rice
Ingredients
- 2 cup Long Grain Rice - cooked
- 3 tbsp Olive oil / ஆலிவ் எண்ணெய்
- ½ cup Onion / வெங்காயம் - thinly sliced
- ½ cup Tomato / தக்காளி - finely chopped
- ½ cup Bell Pepper / குடை மிளகாய் - thinly sliced
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 cup Mixed Vegetables - boiled (sweet corn, carrots and french beans)
- 5 nos Kashmiri Red Chili, Dry
- 4 – 5 pod Garlic / பூண்டு
Instructions
- Crush kashmiri red chili and garlic into a paste, keep aside
- Heat oil in a pan
- Add onions and sauté on a medium flame for 1~2min
- Add chili-garlic paste, tomatoes and capsicum and sauté on a medium flame for 1~2min
- Add salt and 2~3tbsp of water and sauté on a medium flame for 1min
- Add mixed vegetables and 1tbsp of water, mix well and cook on a medium flame for 1~2 minutes, stir occasionally
- Add cooked rice, mix well and cook on a medium flame for 2~3 minutes, stir occasionally
- Serve hot
