Ingredients
  

For Dosa batter

  • 2 cup Rice / அரிசி
  • 1 cup Urad Dhal / உளுத்தம் பருப்பு
  • ½ cup Puffed rice - poha
  • 1 tsp Fenugreek seed / வெந்தயம்

For Masala

  • 3 nos Potato / உருளைக் கிழங்கு - boiled, peeled & mashed
  • 2 nos Onion / வெங்காயம் - cut lengthwise
  • 1 inch Ginger / இஞ்சி - finely chopped
  • 3 pod Garlic / பூண்டு - finely chopped
  • 3 nos Green Chili, Fresh / பச்சை மிளகாய் - finely chopped
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Red Chili powder / மிளகாய்த் தூள்
  • 1 pinch Asafoetida / பெருங்காயம்
  • 2 tbsp Oil / எண்ணெய்
  • 2 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
  • ½ tsp Salt / உப்பு - adjust to your taste

For Red Masala

  • 2 tbsp Chana Dhal, roasted / பொட்டுக் கடலை
  • 5 pod Garlic / பூண்டு
  • 3 nos Red Chili, Dry / வற மிளகாய்
  • 1 inch ball Tamarind / புளி
  • 1 nos Onion / வெங்காயம்
  • ½ tsp Salt / உப்பு - adjust to your taste

Instructions
 

For Dosa batter

  • Soak rice, urad dhal, fenugreek in enough water separately for 5~6hours
  • Drain and grind them in a grinder along with puffed rice and water
  • Mix salt and allow it to ferment for 7~8hours

For Masala

  • Heat oil in a pan
  • Add mustard in it and allow it to splutter
  • Add channa dhal and fry until golden brown
  • Add ginger, garlic, green chilli, curry leaves and fry
  • Add onion and fry until transparent
  • Add turmeric powder, asafoetida, red chilli powder and fry a little by mixing them
  • Add mashed potato and very little water if required
  • Add salt, mix and cover cook for 5~7min until the water dries up
  • Add coriander
  • Keep aside

For Red Masala

  • Grind all the ingredients into a smooth paste
  • Add salt and mix well, keep aside

Preparation of Dosa

  • Heat dosa pan, preferably iron cast
  • Take a ladle full of batter and spread evenly
  • Sprinkle oil on top and sides of dosa
  • Cook for a min
  • When the color of top portion changes gently reverse the dosa
  • Cook for few seconds and reverse it back
  • Spread/brush red masala on the top of dosa
  • Place a table spoon full of potato masala and spread a little
  • Fold/roll the dosa in desired shape
  • Serve hot with coconut chutney, onion tomato chutney and sambhar
