For Red Masala

Instructions
For Dosa batter
Soak rice, urad dhal, fenugreek in enough water separately for 5~6hours
Drain and grind them in a grinder along with puffed rice and water
Mix salt and allow it to ferment for 7~8hours
For Masala
Heat oil in a pan
Add mustard in it and allow it to splutter
Add channa dhal and fry until golden brown
Add ginger, garlic, green chilli, curry leaves and fry
Add onion and fry until transparent
Add turmeric powder, asafoetida, red chilli powder and fry a little by mixing them
Add mashed potato and very little water if required
Add salt, mix and cover cook for 5~7min until the water dries up
Add coriander
Keep aside
For Red Masala
Grind all the ingredients into a smooth paste
Add salt and mix well, keep aside
Preparation of Dosa
Heat dosa pan, preferably iron cast
Take a ladle full of batter and spread evenly
Sprinkle oil on top and sides of dosa
Cook for a min
When the color of top portion changes gently reverse the dosa
Cook for few seconds and reverse it back
Spread/brush red masala on the top of dosa
Place a table spoon full of potato masala and spread a little
Fold/roll the dosa in desired shape
Serve hot with coconut chutney, onion tomato chutney and sambhar
