Ingredients
  

  • 400 gm Penne Pasta - cooked until al dente
  • 500 gm Tomato / தக்காளி - diced
  • 180 gm Cauliflower - cut into flowerets
  • 10 pod Garlic / பூண்டு - crushed
  • 60 ml Olive oil / ஆலிவ் எண்ணெய்
  • 1 tsp Black Pepper / மிளகு - freshly crushed
  • 1 tsp Salt / உப்பு - adjust to your taste
  • ½ cup Parsley leaves, Fresh - finely chopped
  • ½ cup Cheese - grated

Instructions
 

  • Heat olive oil in a large sauce pan
  • Fry crushed garlic in it until color changes
  • Add tomato and sauté well until it becomes mushy
  • Add ½cup of water and mash the tomato well
  • Add cauliflower and simmer the flame for about 30min
  • Meanwhile in another large vessel add 1tsp of salt and 10ml of olive oil and bring to rapid boil
  • Add penne and cook until al dente
  • Drain pasta well and add to the pan of cauliflower and tomatoes
  • Stir in parsley and pepper to taste, toss over high heat for 1 minute
  • Serve topped with grated cheese
  • Serve hot with spicy olive oil
