Penne Con Cavolfiore
Ingredients
- 400 gm Penne Pasta - cooked until al dente
- 500 gm Tomato / தக்காளி - diced
- 180 gm Cauliflower - cut into flowerets
- 10 pod Garlic / பூண்டு - crushed
- 60 ml Olive oil / ஆலிவ் எண்ணெய்
- 1 tsp Black Pepper / மிளகு - freshly crushed
- 1 tsp Salt / உப்பு - adjust to your taste
- ½ cup Parsley leaves, Fresh - finely chopped
- ½ cup Cheese - grated
Instructions
- Heat olive oil in a large sauce pan
- Fry crushed garlic in it until color changes
- Add tomato and sauté well until it becomes mushy
- Add ½cup of water and mash the tomato well
- Add cauliflower and simmer the flame for about 30min
- Meanwhile in another large vessel add 1tsp of salt and 10ml of olive oil and bring to rapid boil
- Add penne and cook until al dente
- Drain pasta well and add to the pan of cauliflower and tomatoes
- Stir in parsley and pepper to taste, toss over high heat for 1 minute
- Serve topped with grated cheese
- Serve hot with spicy olive oil
