Heat olive oil in a large sauce pan
Fry crushed garlic in it until color changes
Add tomato and sauté well until it becomes mushy
Add ½cup of water and mash the tomato well
Add cauliflower and simmer the flame for about 30min
Meanwhile in another large vessel add 1tsp of salt and 10ml of olive oil and bring to rapid boil
Add penne and cook until al dente
Drain pasta well and add to the pan of cauliflower and tomatoes
Stir in parsley and pepper to taste, toss over high heat for 1 minute
Serve topped with grated cheese
Serve hot with spicy olive oil
