Ingredients
  

  • 1 cup Eggplant / கத்தரிக்காய் - chopped
  • 1 cup Potato / உருளைக் கிழங்கு - chopped
  • 1 cup Carrot / காரெட் - chopped
  • 1 cup Onion / வெங்காயம் - chopped
  • 4 nos Green Chili, Fresh / பச்சை மிளகாய் - chopped, adjust to your spice level
  • 1 tsp Ginger / இஞ்சி - chopped
  • 1 cup Moong Dhal / பயத்தம் பருப்பு - cooked
  • 1 tsp Cumin seed / சீரகம்
  • 1 tsp Mustard seed / கடுகு
  • 3 tbsp Oil / எண்ணெய்
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Garam Masala powder
  • 1 pinch Asafoetida / பெருங்காயம்
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - chopped
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை - chopped

Instructions
 

  • Heat oil in a pan
  • Temper mustard, cumin
  • Add onion and sauté well until transparent
  • Add green chili, ginger, fry well
  • Add potato, carrot, eggplant and sauté well
  • Add water and bring to a boil
  • Add cooked moong dhal, mix well
  • Simmer for about 5min or until the gotsu becomes to a thick consistency
  • Add garam masala, cook for 2min by stirring well
  • Garnish with curry leaves, coriander leaves
  • Serve hot with ven pongal
