Heat oil in a pan
Temper mustard, cumin
Add onion and sauté well until transparent
Add green chili, ginger, fry well
Add potato, carrot, eggplant and sauté well
Add water and bring to a boil
Add cooked moong dhal, mix well
Simmer for about 5min or until the gotsu becomes to a thick consistency
Add garam masala, cook for 2min by stirring well
Garnish with curry leaves, coriander leaves
Serve hot with ven pongal
