Ratatouille
Ingredients
- 2 nos Onion, Red - peel n sliced
- 2 nos Eggplant / கத்தரிக்காய் - sliced
- 3 nos Zucchini - sliced
- 2 nos Tomato / தக்காளி - sliced
- 1 nos Onion / வெங்காயம் - finely chopped
- 4 pod Garlic / பூண்டு - peeled n sliced
- 1 nos Yellow Pepper - roughly chopped
- 1 nos Red Pepper - roughly chopped
- 4 nos Tomato / தக்காளி - diced
- 1 tbsp Balsamic Vinegar
- 1 tbsp Lemon Zest
- 1 bunch Basil leaves, Fresh - chopped
- 2 tsp Thyme leaves, Fresh - chopped
- 1 tsp Black Pepper / மிளகு - freshly crushed
- 2 tbsp Olive oil / ஆலிவ் எண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Heat olive oil in a pan over a medium heat
- Add onion, garlic and sauté until translucent
- Add red and yellow pepper and sauté until soft
- Add diced tomato and cook until mushy
- Add balsamic vinegar, salt, black pepper and mix well
- Blend them until soft with a hand blender
- Level the above sauce in a baking dish
- Arrange onion, eggplant, zucchini, tomato over the sauce such that it covers the sauce
- Sprinkle some olive oil, salt, basil and thyme
- Pre-heat oven to 230°C
- Cover the baking dish with foil and bake for 30min
- Tear basil leaves, and sprinkle lemon zest
- Serve hot with toasted bread or steamed rice
