Rice Salad with Spicy Yoghurt Dressing
Ingredients
- ½ cup Basmati Rice / பாசுமதி அரிசி - cooked
- 2 nos Tomato / தக்காளி - chopped
- ½ cup Corn
- ½ cup Chive - chopped
- ¼ cup Black beans - whole urad dhal with skin, soaked for 6hrs
- 1 tsp Salt / உப்பு
- 3 tbsp Sour Curd / தயிர் புளித்தது
- 1 nos Lemon / எலுமிச்சம் பழம் - juice
- 1 tsp Red Chili powder / மிளகாய்த் தூள்
- 2 tbsp Mayonnaise
- ¼ tsp Black Pepper / மிளகு - freshly crushed
- 1 nos Green Chili, Fresh / பச்சை மிளகாய் - chopped
- 1 nos Red Chili, Dry / வற மிளகாய் - damped and chopped
- 2 tsp Parsley leaves, Fresh - chopped
- 1 nos Avocado - wedged (Due to unavailability, I did not use though)
- 2 tsp Coriander leaves, Fresh / கொத்தமல்லி - chopped
Instructions
- Toss rice, tomato, corn, chive, black beans in a big bowl along with ½tsp of salt and pepper
- Mix sour curd, lemon juice, red chili powder, mayonnaise, green chili, red chili
- Drizzle the dressing over salad mixture and toss
- Garnish with avocado wedges, parsley and coriander
- Serve
