Rice Salad with Spicy Yoghurt Dressing

Ingredients
  

  • ½ cup Basmati Rice / பாசுமதி அரிசி - cooked
  • 2 nos Tomato / தக்காளி - chopped
  • ½ cup Corn
  • ½ cup Chive - chopped
  • ¼ cup Black beans - whole urad dhal with skin, soaked for 6hrs
  • 1 tsp Salt / உப்பு
  • 3 tbsp Sour Curd / தயிர் புளித்தது
  • 1 nos Lemon / எலுமிச்சம் பழம் - juice
  • 1 tsp Red Chili powder / மிளகாய்த் தூள்
  • 2 tbsp Mayonnaise
  • ¼ tsp Black Pepper / மிளகு - freshly crushed
  • 1 nos Green Chili, Fresh / பச்சை மிளகாய் - chopped
  • 1 nos Red Chili, Dry / வற மிளகாய் - damped and chopped
  • 2 tsp Parsley leaves, Fresh - chopped
  • 1 nos Avocado - wedged (Due to unavailability, I did not use though)
  • 2 tsp Coriander leaves, Fresh / கொத்தமல்லி - chopped

Instructions
 

  • Toss rice, tomato, corn, chive, black beans in a big bowl along with ½tsp of salt and pepper
  • Mix sour curd, lemon juice, red chili powder, mayonnaise, green chili, red chili
  • Drizzle the dressing over salad mixture and toss
  • Garnish with avocado wedges, parsley and coriander
  • Serve
