Schezwan Sauce
Ingredients
- 20 nos Red Chili, Dry / வற மிளகாய் - soaked in hot water for 15min
- 5 nos Shallots - finely chopped
- 10 nos Garlic / பூண்டு - finely chopped
- 1 inch piece Ginger / இஞ்சி - finely chopped
- 1 tbsp Celery - finely chopped
- ½ tsp Black Pepper / மிளகு - freshly ground
- 1 tsp Sugar, White / சர்க்கரை, வெள்ளை
- 1 tsp Vinegar
- 1 tsp Soy Sauce
- 4 tbsp Sesame Oil / நல்லெண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Drain water and grind red chili into fine paste
- Heat oil in a wok
- Add garlic, fry them until golden brown
- Add shallots, fry them until translucent
- Add ginger, celery and fry them for 1min
- Add chili paste, stir well
- Add little water and allow it to cook in low heat
- Add vinegar, soy sauce and mix well
- Add salt, pepper powder, sugar and mix well
- Stir and cook until the sauce is thick enough
- Cool it down
Notes
Store in a air tight container
