Ingredients
  

  • 20 nos Red Chili, Dry / வற மிளகாய் - soaked in hot water for 15min
  • 5 nos Shallots - finely chopped
  • 10 nos Garlic / பூண்டு - finely chopped
  • 1 inch piece Ginger / இஞ்சி - finely chopped
  • 1 tbsp Celery - finely chopped
  • ½ tsp Black Pepper / மிளகு - freshly ground
  • 1 tsp Sugar, White / சர்க்கரை, வெள்ளை
  • 1 tsp Vinegar
  • 1 tsp Soy Sauce
  • 4 tbsp Sesame Oil / நல்லெண்ணெய்
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Drain water and grind red chili into fine paste
  • Heat oil in a wok
  • Add garlic, fry them until golden brown
  • Add shallots, fry them until translucent
  • Add ginger, celery and fry them for 1min
  • Add chili paste, stir well
  • Add little water and allow it to cook in low heat
  • Add vinegar, soy sauce and mix well
  • Add salt, pepper powder, sugar and mix well
  • Stir and cook until the sauce is thick enough
  • Cool it down

Notes

Store in a air tight container
