Semiya Upma
Ingredients
- 3 cup Vermicelli / சேமியா
- 1 nos Potato / உருளைக் கிழங்கு - chopped
- 2 nos Tomato / தக்காளி - chopped
- 2 nos Onion / வெங்காயம் - long cut
- 1 nos Carrot / காரெட் - chopped
- 50 gm French Beans, Fresh - chopped
- 2 – 3 nos Green Chili, Fresh / பச்சை மிளகாய் - long slit
- 2 tbsp Green Peas, Fresh / பச்சைப் பட்டாணி
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - chopped
- 1 tsp Mustard seed / கடுகு
- 1 tsp Urad Dhal / உளுத்தம் பருப்பு
- 5 – 10 nos Cashew nut / முந்திரிப் பருப்பு
- 3 tbsp Oil / எண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Heat 2tbsp oil in a pan
- Fry vermicelli until golden brown, keep it aside
- Heat rest of oil in the same pan
- Temper mustard in it
- Add urad dhal, cashew and fry until golden brown
- Add green chili, onion and fry them until transparent
- Add rest of vegetables sauté well
- Add fried vermicelli, salt, mix well
- Add 3cup of water
- Mix well and cook for 5min
- Serve hot with curd or coconut chutney
