Ingredients
  

  • 1 kg Potato / உருளைக் கிழங்கு - boiled n peeled
  • 2 tbsp Olive oil / ஆலிவ் எண்ணெய்
  • 1 cup Onion / வெங்காயம் - finely chopped
  • 2 pod Garlic / பூண்டு - finely chopped
  • 200 gm Tomato / தக்காளி - finely chopped
  • 2 tbsp Tomato puree / தக்காளி விழுது
  • 1 tbsp Vinegar
  • 1 tsp Red Chili powder / மிளகாய்த் தூள்
  • 1 tbsp Capsicum / குடை மிளகாய் - finely chopped
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 tsp Black Pepper / மிளகு
  • 2 - 3 leaves Parsley leaves, Fresh - to Garnish

Instructions
 

  • Heat oil in a pan
  • Fry onions and garlic till onion becomes light
  • Add tomato puree, tomato, vinegar, chili powder, chopped capsicum, pepper powder and salt one by one and fry for 5 minutes
  • Add the boiled potatoes and mix well
  • Garnish with parsley
