Ingredients
  

  • 400 gm Potato / உருளைக் கிழங்கு - cut into 1inch pieces
  • 2 nos Onion / வெங்காயம் - randomly chopped
  • 6 pod Garlic / பூண்டு - randomly chopped
  • 1 inch Ginger / இஞ்சி - randomly chopped
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tsp Garam Masala powder
  • 1 tsp Coriander powder / மல்லித் தூள்
  • 1 pinch Asafoetida / பெருங்காயம்
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 100 ml Oil / எண்ணெய்
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Steam potato until soft, peal of skin (I made with skin, but not all like with skin)
  • Grind onion, garlic, ginger into a smooth paste
  • Add turmeric powder, red chili powder, garam masala powder, coriander powder, salt, asafoetida and mix well
  • Mix, marinate potato with masala for about 30min
  • Heat oil in a pan
  • Add marinated potato, cook to roast over low heat for 15~20min
  • Garnish with curry leaves

Notes

Serve hot along with roti/rice
