Instructions
Steam potato until soft, peal of skin (I made with skin, but not all like with skin)
Grind onion, garlic, ginger into a smooth paste
Add turmeric powder, red chili powder, garam masala powder, coriander powder, salt, asafoetida and mix well
Mix, marinate potato with masala for about 30min
Heat oil in a pan
Add marinated potato, cook to roast over low heat for 15~20min
Garnish with curry leaves
Notes
Serve hot along with roti/rice
