Spinach Biriyani
Ingredients
- 2 cup Basmati Rice / பாசுமதி அரிசி
- 1 bunch Spinach leaves / பசலைக்கீரை
- ½ cup Coriander leaves, Fresh / கொத்தமல்லி
- ½ cup Mint leaves, Fresh / புதீனா இலை
- 4 nos Green Chili, Fresh / பச்சை மிளகாய் - adjust to your spice level
- 1 tsp Garlic / பூண்டு - crushed
- 1 tsp Ginger / இஞ்சி - crushed
- 1 nos Onion / வெங்காயம் - long thin sliced
- 1 nos Tomato / தக்காளி - chopped
- 2 nos Cloves / லவங்கம்
- 2 nos Cardamom, Green / ஏலக்காய்
- 1 nos Star Anise
- 1 inch Cinnamon stick / லவங்கப் பட்டை
- 1 nos Bay leaf, Dry
- 50 gm Cashew nut / முந்திரிப் பருப்பு
- 50 ml Ghee / நெய்
Instructions
- Soak rice for 20min
- Fry 25gm of cashew in ghee, keep aside
- Grind spinach, coriander leaves, mint leaves, green chili, garlic, ginger, rest of cashew nuts into a puree, keep aside
- Fry clove, cardamom, star anise, cinnamon, bay leaf in ghee until fragrant
- Sauté onion until it turns brown
- Add tomato, fry until mushy
- Add spinach puree, cook well until it becomes a paste
- Drain water from the rice, add to the above mix
- Add salt
- Add adequate water
- Open cook or pressure cook the rice
- Fluff it up
- Garnish with fried onion, cashew nuts

Serve hot with any raita
