Soak rice for 20min
Fry 25gm of cashew in ghee, keep aside
Grind spinach, coriander leaves, mint leaves, green chili, garlic, ginger, rest of cashew nuts into a puree, keep aside
Fry clove, cardamom, star anise, cinnamon, bay leaf in ghee until fragrant
Sauté onion until it turns brown
Add tomato, fry until mushy
Add spinach puree, cook well until it becomes a paste
Drain water from the rice, add to the above mix
Add salt
Add adequate water
Open cook or pressure cook the rice
Fluff it up
Garnish with fried onion, cashew nuts
