Sweet Pumpkin Masala Curry
Ingredients
- 500 gm Sweet Pumpkin / பரங்கிக் காய் - finely chopped
- 1 nos Onion / வெங்காயம் - chopped
- 5 pod Garlic / பூண்டு
- 2 nos Tomato / தக்காளி - chopped
- 1 cup Coconut, Fresh / தேங்காய் - grated
- 4-5 nos Green Chili, Fresh / பச்சை மிளகாய் - adjust to your spice level
- 2 tbsp Oil / எண்ணெய்
- 1 tsp Mustard seed / கடுகு
- 1 tsp Cumin seed / சீரகம்
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 tsp Garam Masala powder
- 1 pinch Asafoetida / பெருங்காயம்
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
- 1 tbsp Jaggery / வெல்லம் - , optional
Instructions
- Grind coconut, garlic, green chili, cumin
- Heat oil in a pan
- Add mustard and allow it to splutter
- Add onion and sauté until transparent
- Add tomato and sauté until mushy
- Add turmeric, asafoetida, mix well
- Add sweet pumpkin, salt, mix well
- Add 1cup water
- Lower the flame and cook closed for 10min or until sweet pumpkin turns tender
- Mix the ground masala, garam masala, jaggery and cook for additional 5min
- Garnish with curry leaves, coriander leaves
Notes
Serve hot along with roti or rice
