Thiruvathirai Adai
Ingredients
- 1 cup Rice / அரிசி
- 1 cup Jaggery / வெல்லம்
- 2 tbsp Coconut / தேங்காய் - grated
- 2 tbsp Ghee / நெய்
- 1 nos Cardamom, Green / ஏலக்காய்
- 1½ cup Water / தண்ணீர்
Instructions
- Wash and soak rice for about 1hr
- Drain water and spread rice on a cloth to dry for about 10min
- Grind dried rice along with cardamom
- Sieve the flour to get smooth rice flour
- Grind the coarse rice again and repeat the process until whole rice is well ground
- Heat a pan in medium-low flame
- Add the rice flour and fry till the flour loses its stickiness
- Dissolve and filter jaggery to remove any impurities
- Boil the dissolved jaggery in a pan
- Add roasted rice flour and stir well, so that no lumps are formed
- Add coconut and mix well
- Divide the above prepared dough into equal balls
- Spread each ball over a greased plastic cover or banana leaf like Boli
- Heat a pan in low flame
- Cook both sides of the adai, add ghee and allow it to roast

* If you are very particular on shape, you could cut the adai with a circular lid or something
