Tumbler Idli
Ingredients
- 1½ cup Rice, raw / பச்சரிசி
- 1 cup Urad Dhal / உளுத்தம் பருப்பு
- 1 tsp Fenugreek seed / வெந்தயம்
- 1 tsp Black Pepper / மிளகு
- 10 - 15 nos Cashew nut / முந்திரிப் பருப்பு - broken
- 2 - 3 nos Green Chili, Fresh / பச்சை மிளகாய் - chopped
- 1 inch Ginger / இஞ்சி - chopped
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 pinch Asafoetida / பெருங்காயம்
- 1 tsp Mustard seed / கடுகு
- 3 tbsp Oil / எண்ணெய்
- 1 tsp Ghee / நெய்
Instructions
- Soak rice, urad dhal separately for 5~6hours
- Drain water, grind urad dhal into a fine dough
- Drain water, grind rice into a little coarse dough
- Mix both along with salt, allow it to ferment for 6~8hours
- Heat oil, add mustard allow it to splutter
- Add ginger, green chili, pepper, cashew, asafoetida, fry well
- Mix well with idli dough
- Grease medium-sized tumblers with ghee
- Fill in dough upto ¾volume, leave headroom for expansion while cooking
- Steam them for about 15min in high, medium flame, 5min in low flame
- Allow them to cool, remove idlis carefully
