Instructions
Soak rice, urad dhal separately for 5~6hours
Drain water, grind urad dhal into a fine dough
Drain water, grind rice into a little coarse dough
Mix both along with salt, allow it to ferment for 6~8hours
Heat oil, add mustard allow it to splutter
Add ginger, green chili, pepper, cashew, asafoetida, fry well
Mix well with idli dough
Grease medium-sized tumblers with ghee
Fill in dough upto ¾volume, leave headroom for expansion while cooking
Steam them for about 15min in high, medium flame, 5min in low flame
Allow them to cool, remove idlis carefully
