Vaangi Baath
Ingredients
- 2 cup Rice / அரிசி - cooked
- 4 nos Eggplant / கத்தரிக்காய் - chopped
- 2 nos Red Chili, Dry / வற மிளகாய்
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
- 1 tsp Mustard seed / கடுகு
- 1 tsp Chana Dhal / கடலைப் பருப்பு
- 2 tbsp Peanut / வேர்க் கடலை
- 2 tbsp Oil / எண்ணெய்
- 1 tbsp Salt / உப்பு - adjust to your taste
- 1 pinch Asafoetida / பெருங்காயம்
- 4 tbsp Vaangi Baath Masala
Instructions
- Heat oil in a pan
- Temper mustard in it
- Add red chili, channa dhal and fry it
- Add vaangi baath masala and fry it
- Add eggplant and sauté it well until it is cooked
- Add salt and mix well
- Add cooked rice, mix well and cook for 2~3min
- Serve hot with fried vadam
Notes
Variation
- Use green bell pepper in lieu of eggplant
- Use cashew nut in lieu of groundnut
