Vegetable Stew
Ingredients
- 2 nos Carrot / காரெட் - cut into ½inch pieces
- 2 nos Potato / உருளைக் கிழங்கு - cut into ½inch pieces
- 100 gm French Beans, Fresh - long cut
- 50 gm Green Peas, Fresh / பச்சைப் பட்டாணி
- 5 - 10 florets Cauliflower - optional
- 5 -10 florets Broccoli - optional
- 3 - 4 nos Garlic / பூண்டு - smashed
- 3 - 5 nos Green Chili, Fresh / பச்சை மிளகாய் - slit, adjust to your spice level
- ½ inch piece Ginger / இஞ்சி - smashed
- 1 inch piece Cinnamon stick / லவங்கப் பட்டை
- 2 nos Cloves / லவங்கம்
- 2 nos Cardamom, Green / ஏலக்காய்
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
- 3 tbsp Coconut Oil / தேங்காய் எண்ணெய்
- 250 ml Coconut Milk / தேங்காய்ப் பால்
- ½ tsp Black Pepper / மிளகு - freshly ground
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Heat 2tbsp of coconut oil
- Fry cardamom, cinnamon, clove, garlic, ginger well
- Add carrot, potato, french beans, green peas, cauliflower, broccoli, mix well
- Add salt, little water or thin coconut milk
- Close cook in low flame for 20min or until all vegetable are tender
- Add rest of coconut milk and bring to a boil
- Heat rest of coconut oil in another pan

Fry curry leaves, garnish over the stew
